Koch el de Oaxaca’s Espadin mezcal is made in small batches, using artisanal methods and centuries-old technology. Espadin Espadín matures over the course of 5-8 years, produces a lot of sugar, and is easily cultivated, so it is distinctively marked by the hands of the mezcalero so it can take on a multitude of characteristics and levels of quality. Made traditionally in Oaxaca by Pedro Hernandez, this mezcal is double-distilled in a copper still and is bottled at 94 proof.
