Thomas S. Moore Kentucky Straight Bourbon Whiskey Finished in Chardonnay Casks is a rich bourbon by the Barton 1792 Distillery, one of three in their line of “extended cask finished” bourbon whiskeys. Their signature high rye recipe bourbon is aged for many years in new charred oak barrels before filling other casks that previously matured fine chardonnay wine. In these fabulous casks, the bourbon is aged an additional one to three years. This extended cask-finishing method results in an elegant whiskey with a distinct flavor profile, reflecting nuances of both the bourbon and the finishing cask.
This well-structured bourbon starts with the complex nose of gingerbread spices, dark chocolate, leather book bindings, roasted pecans, blackberry and raspberry preserves, and decadent brown sugar. The palate is tightly wound and needs patience to fully reveal its manifold flavors that range from dried cherries and roasted peanuts to lemon and orange peel, integrated baking spice, and marshmallow.
