Description
With its brilliant pink hue reminiscent of a sunset over white sand, this handcrafted Sparkling Rosé captivates both the eye and the palate. Made from estate-grown Cabernet Sauvignon and crafted using the traditional Méthode Champenoise, the wine undergoes secondary fermentation in the bottle, followed by hand riddling and finishing with a brut dosage.
Grown at elevations up to 2,200 feet in Lake County’s Red Hills AVA, the fruit reflects the purity of Hawk and Horse’s mountain vineyard — defined by rocky volcanic soils, Lake County “diamonds,” and pristine spring water. As a family-owned and operated estate, Hawk and Horse farms according to the biodynamic principles introduced by Rudolf Steiner, using organic practices and minimal cellar intervention to honor the land and showcase terroir.
