Made from local Dallam County Texas #1 Panhandle White Corn, Balmorhea was aged four yrs in new charred American White Oak and then decanted into new barrels again for an additional fifth of aging, which has allowed the brothers to produce a sincerely impressive whiskey. While the profile is oak-driven and dense, there is an oiliness and juicy element that keeps things very fresh and inviting, allowing the whisky to flirt on the edge without falling flat. The flavors are beautiful and well-defined with maple syrup, dark honey, pecan pie, sarsparilla, allspice, dates, smores, tanned leather, and a pepper and spice dry finish.
