Domaine Pinson’s Chablis, a 100% Chardonnay wine sourced from 45+ year-old vines with a southeast exposure, offers a truly exceptional expression of this renowned Burgundian appellation. Situated in close proximity to Les Clos and benefiting from the same sun-kissed exposure as the band of Grand Cru, this wine derives its distinct character from the Kimmeridgian soil laden with white stones. The winemaking process includes fermentation in 90% stainless steel and 10% new barrels, followed by aging in 1-3 year old barrels. The result is an exotic bouquet of pineapple, vanilla, and apricot on the nose, complemented by a round, well-balanced palate and a delightful persistence of flavor. This Chablis pairs harmoniously with dishes like fish with sauce, white meat in cream, and ham with a chablisienne sauce.
