Description

Belgian Owl is the only distillery in the Liege region of Belgium, it is a one-man project of Etienne Bouillon, who honed his skills at the Whisky Academy on Islay, Scotland under master distiller Jim McEwan (Bruichladdich). A converted farm on the outskirts of the village Grace-Hollonge, the Owl currently produces one product: Belgium’s only single malt whisky.

The Belgian Owl Whisky is produced from 100% malted barley grown in the nearby village of Hesbaye and water from a protected aquifer 40 meters below the distillery itself, Belgian Owl whisky is distilled using two handmade stills, each dating from 1880s and with capacity of 500 liters. M. Bouillon ages the whisky in used American oak ex-bourbon casks for three years. Bottled at 46% alc/vol.

NOSE: Vanilla, plum coconut, lemon.

PALATE: Fresh, light, vanilla, figs, ripe pears, cinnamon.

FINISH: Long, spice, fresh apple.
